eng The growth characteristics of pathogenic bacteria Arcobacter butzleri Arcobacter butlzeri is newly emerging foodborne pathogen and little was known about growth in different restricted condition. The aim of this study was to investigate combined effect of low water activity and addition of acetic acid. Growth of two strains of A. butlzeri (CCM 7051 and CCUG 30484) was determinated in laboratory media adjusting with NaCl to obtain 0.990 and 0.975 aw and acetic acid addition (0.0-0.3%). Acetic acid and low water activity alone inhibited growth of bacteria. Low water activity (0.975 aw) enhanced inhibitory effect of 0.1% acetic acid whereas this enhancing effect was not apparent at higher concentraction range (0.2-0.3%).
