eng Analysis of Free Amino Acids in Honey by Capillary Zone Electrophoresis CZE with UV detection (254 nm) was used for analysis of free amino acids occurring in different honey samples. Standard solutions of 20 amino acids and sample solutions were precapillary derivatized by PITC using modified method described in and then analyzed using non-coated fused silica capillaries and phosphate buffers as background electrolytes. The best separation selectivity of PITC derivatives was achieved in 30 mmol/L phosphate buffer (pH = 7.4) containing 4 mmol/L β-cyclodextrin. Limit of detection and limit of quantitation was calculated from the calibration measurements. Amino acid content was evaluated in commercial honey samples and samples acquired from private bee-keepers. Finally, results obtained by PITC-derivatization method were compared with direct CZE sample analysis (no derivatization step, detection UV at 190 nm).
