eng Analysis of Free Amino Acids in Honey by Capillary Zone Electrophoresis CZE with UV detection at 254 nm was used for analysis of free amino acids occurring in different honey samples. Standard solutions of 20 amino acids and sample solutions were pre-capillary derivatized by PITC and then analyzed using non-coated fused silica capillaries and borate and phosphate buffers of different pH as background electrolytes. To improve separation selectivity, the addition of neutral β-and γ- cyclodextrin to the working electrolyte was tested. The best separation selectivity of standard PTC derivatives was achieved in 30 mmol/L phosphate buffer (pH = 7.4) containing 4 mmol/L β-cyclodextrin. Limit of detection and limit of quantitation were calculated from calibration measurements. Finally, amino acid content was evaluated in commercial honey samples and samples acquired from private bee-keepers.
