eng Quality of Czech Honeys The honey is very popular apiculture product. Its quality is important and many analytical methods for its confirmation have been developed. The International Honey Commission has published ”Harmonised methods” for verifying the quality of honey. This collection of methods includes parameters which should be determined in a sample of honey to consider its quality. The principles and detailed procedures are described in this document. The most important parameters are following: moisture, electrical conductivity, ash content, free acidity, determination of hydroxymethylfurfural (HMF) with HPLC and also after White and after Winkler, apparent reducing sugars, insoluble matter, quantity of amino acid proline and specific rotation. 25 samples of Czech honeys from beekeepers and also from trade network were analyzed and its quality was evaluated. 10 parameters were determined at these samples. honey; quality
