The extraction conditions were optimized in terms of temperature, time and sample volume of head-space GC/MS method. The optimal parameters of the extraction were identified on the basis of the statistical evaluation. The most suitable conditions as follows: the extraction temperature of 80 °C, the extraction time of 15 minutes and a sample volume of 4 ml.	Volatile Organic Compounds; Alcoholic Beverages; GC-MS
