eng Dealcoholisation of Model Solutions by Reverse Osmosis This research paper is divided on the two parts. First part describes the basic strategies in production of alcohol-free beer. The second part is focused on the experimental work. There are many strategies, how to prepare alcohol-free beer. These methods could be divided into two large groups, physical and biological methods. In the first group are involved the physical methods (pervaporation, distillation, membrane technology). Biological methods are based on limited ethanol formation through the control and modification of beer fermentation e.g. stopped yeast, immobilized yeast fermentation, genetically modified yeasts or use of non-Saccharomyces yeasts.Understanding of these strategies is starting point of new research in alcohol-free beer production.
