eng Determination of selected phenolic compounds in mead In this work the quantitative analysis of 23 selected polyphenolic compounds was performed using reversed-phase high-performance liquid chromatography (HPLC) separation coupled with mass spectrometric (MS) detection. The separation was performed using gradient elution with core-shell octadecyl silica gel particles as a stationary phase and mixture of acetonitrile with acidified water (0.3% formic acid) as a mobile phase. The mass spectrometry in multiple reaction monitoring mode was used for selective detection and quantification of 23 phenolic compounds. Optimized HPLC/MS separation was carried out in 8 min. This method was applied to a set of 20 meads obtained by beekepers or purchased in the local markets. The mead without any honey phenolic compounds was found in one studied sample, which can be probably caused by falsification. Therefore the monitoring phenolic profile in mead can help to verify quality of mead. mead, phenolic compounds, HPL C/MS
