eng Isotachophoretic Determination of Water-Soluble Vitamins in Food Supplements Water-soluble vitamins are group of very various compounds which are necessary for human nutrition. All these compounds are essential – they are acquired only from food, because human body can’t synthesize them de novo. To water-soluble vitamins we conclude vitamin C (ascorbic acid) and B vitamins. In general, vitamins play important role in metabolism – primarily they work as cofactors of enzymes, regulators of metabolism, antioxidants, prevention of many diseases, and they certainly have more, or less important other functions. Deficit of vitamins can cause state which is called hypovitaminosis. This state is dangerous for human health, because metabolic processes can’t keep going well. Because of all, what has already been said, it is very important to determine the content of vitamins in human serum, and in food and dietary supplements as well. There are a lot of methods of determination, the most common is high performance liquid chromatography (as example [1-2]) and capillary electrophoresis (as example [3]). When we focus on capillary isotachophoresis there are several papers which deal with determination of water-soluble vitamins (as example [4]).
