eng Electrochemical Detection of Ergosterol by Square-Wave Voltammetry for Screening in Mold-contaminated Food Ergosterol is a sterol that is specific to fungi membranes. The concentration of ergosterol correlates with fungal growth. This work aimed at the electrochemical detection of ergosterol in food samples by square-wave voltammetry. This method could be a simple screening method for fungal food contamination compared to chromatographic or microbiological methods. For measuring, the screen-printed sensors with boron-doped diamond working electrode were used. The samples fungi mycelium, moldy grain, and moldy bread were used.
