eng Effect of Ultrasonic Pre-Treatment on Aroma-Profile of Apple Spirits This work deals with the changes in aromaprofile during artificial aging of apple spirits. Four samples of apple spirit were undergone to artificial aging by ultrasonic pre-treatment. All analyses were performed by gas chromatography–mass spectrometry. Headspace–solid phase microextraction (HS-SPME) was used as a preconcentration step. HS-SPME procedure was optimized for 100 μm PDMS fiber at several parameters (sample amount, amount of added NaCl, extraction temperature and extraction time). SPME; GC-MS; Apple Spirits
